The Canteen in Aberdeen: Pheasant Sandwiches - The vegetables provided plenty of crunch, and the sweet/sour of the pickle relish helped bring out the pleasantly assertive flavor of the pheasant. More mayo wouldn't be unwelcome--but it would be unnecessary.
