Not technically a sandwich, perhaps.
My lunch consisted of some sourdough rye, lightly toasted and spread with butter and peanut butter, then topped with kimchi on one slice and sugar&cinnamon on the other. The second, I already knew to be a winning combo, but the first was a surprising success.
Salty, sour, hot, crunchy kimchi combined perfectly with sweetish gooey pb, and slightly chewy toast. I would totally eat this again.
I’m a mother of two boys. I work selling organic produce to gullible locals, and in my spare time I run as far as I can. Oh, and I live in Australia, married to a US citizen.
